Ms Dengate, a food intolerance counsellor, began the study with paediatrician Dr Alan Ruben when food regulators ignored her reports about the effects of calcium propionate.
The controlled study started by putting children with behaviour problems on the Royal Prince Alfred Hospital elimination diet, which avoided 50 harmful additives as well as natural salicylates, amines and glutamates.
“The results in this phase of testing were remarkable,” said Dengate. “Behaviour ratings for irritability, restlessness, inattention and sleep disturbance dropped from the 95th percentile to the 31st percentile showing just how badly some kids are affected by a range of chemicals in our food.”

ANNE BARKER: As a small child, Sue Dengate’s daughter, Rebecca, developed a high level of intolerance to certain foods, foods with preservatives or colourants that made her child moody and sleepless or lose concentration.
SUE DENGATE: She was irritable from day one. She was a sleepless baby. When she was awake she needed constant attention. If she had my attention all the time, then she was fine.
ANNE BARKER: But it was preservative 282 or calcium propinate, a mould inhibitor in bread, that seemed to have the worst effect.
SUE DENGATE: We took 27 children who had to go on an elimination diet for three weeks. They all had problems with behaviour, not necessarily ADHD. They just had behaviour problems. And the elemination diet got them as good as they could be.
Then they had to eat four slices of bread every day for three days. One week they had one feed of bread. The next week they had the next lot. And nobody knew. I didn’t know, they didn’t know, which one had the preservative in it.
More than 50 percent of the children clearly reacted to the bread with preservative in it.

The real question in my mind is why don’t the buns mold? That’s the really scary part, since healthy bread begins to mold within days. What could possibly be in McDonald’s hamburger buns that would ward off microscopic life for more than two decades?
As it turns out, unless you’re a chemist you probably can’t even read the ingredients list out loud. Here’s what McDonald’s own website says you’ll find in their buns:
